Auntie Tina's Green Beans

Happy Sunday friends! I hope that your day was less cloudy and rainy than it was here in Connecticut. Can't wait till Spring springs!!!


So today, I want to share with you Sal's Auntie Tina's Green Beans. She passed this down to me as I watched her make them. Of course she had no actual recipe so I figured amounts as I write this for you. Super fast and easy...Here we go. Please feel free to comment or send me any questions that you have. Auntie Tina's Green Beans


1 lb or so of fresh green beans


6 cloves of garlic, cut in half and then sliced in slivers.


1 tbs cut mint (spearmint works best. The one in the pictures I just picked from my garden. Love going out to pick things as I am cooking!)


1/2 cup extra virgin olive oil


1/2 cup cider or red wine vinegar


Salt and Pepper to taste


Start boiling a pot of salted water

Cut ends of green beans

When water comes to a boil, throw in the beans

Bring back to a boil and cook until they are barely al dente, about 10 minutes.

Drain.

In a large frying pan, add oil and garlic. Simmer until garlic starts to bubble in the oil.

Add green beans.

Add salt and pepper to taste.

Add mint and vinegar.

Stir.

Bring to a boil and then lower the heat to medium low. Keep stirring until beans start turning a light green.

Cover and lower heat to low.


These beans can be served hot as a side dish or place in the refrigerator and serve cold as a salad.
