The BEST Potatoes!!!!!

A few years ago, I was making fried ,breaded pork chops for dinner and wondering what else I was going to make.....I thought I would do some potatoes and then this recipe happened! When I served them to Sal he said "These are the best potatoes in the world!!!" From that moment on, these have been known in my house as "The Best Potatoes". I make them at least once a month. They are a great side for Pork Chops, Steaks, Fish, Chicken....whatever you fancy! I made these last night with London Broil.

They are crispy on the outside and nice and soft on the inside. The flavor of the potatoes and onions cooked together makes them a great comfort food. They are very easy and quick to make, perfect for a quick dinner when you have just gotten home from work and don't want to spend the whole night in the kitchen. This recipe serves 4 generously with a little left for tomorrow's lunch. Here we go.....please leave a comment below and tell me what you think of this recipe!!


THE BEST POTATOES

1 5lb bag of Russet potatoes

1 large yellow onion

1 cup Canola oil

2 tbs chopped fresh or 1 tbs dried parsley

Salt and Pepper to taste


Peel potatoes, rinse under cold water and slice them across to about 1/4 to 1/2 inch slices.

As I slice them, I place them on a paper towel lined dish to absorb some of the water.

Peel and slice onion into 1/4 or so inch slices.

Heat oil on high heat in a large frying pan

When oil is hot, place potatoes and onions in pan, carefully so that the oil doesn't splatter on you!

Add salt, pepper and parsley

Keep heat on high and flip them often.

Fry until golden brown and crispy and the inside is soft and breaks with a fork. (About 15 minutes)

Transfer to a serving dish.
