Zucchini In Tomato Sauce

Happy Sunday Friends!!

Today I am sharing my own recipe for Zucchini in Tomato Sauce. You can use this as a side dish, over pasta or rice. Try it and please tell me what you think!

3 medium zucchini, sliced

1 medium onion, cut in half and sliced

8 cloves of garlic, chopped

1/2 extra virgin olive oil

1 1/2 c tomato puree

1 1/2 c water

2 tsp salt

1 tsp pepper

1 tsp dried oregano

1 tbs dried parsley

few dashes hot pepper sauce

In large frying pan sautee onion and garlic in the olive oil. Add zucchini and stir. Add tomato puree and water and stir some more. Add rest of ingredients and stir. Bring to a boil. Reduce heat and simmer until zucchini is soft but not mushy.

Serve over rice or pasta. Sprinkle fresh or dried parsley flakes. Add grated Romano cheese to your liking. This picture shows it over cooked ziti. Enjoy!
