Pepper and Egg Grinder

Do you call them grinders, or hoagies, or wedges? What else do you call them??? Different parts of the country calls them differently. All it is, is an Italian sandwich.

Years ago, there used to be a grinder shop in the Berlin Turnpike in Connecticut called Sal's Grinders. No, no relation to my husband Sal. They had the best grinders! One cool thing about them is that they called each grinder by the day of the week. My favorite was a Friday. The Friday was a pepper and egg grinder. I used to buy them all the time, but being that I love to cook, I had to figure out how to make them.

I have been making them for years and now I think it's time to share it with you!


Pepper and Egg Grinder


I small Italian grinder roll cut in half

1/4 cup of my " The Easiest Tomato Sauce" hot

1/2 green pepper, cut in large pieces

2 eggs, beaten with 1/4 tsp salt and a dash of black pepper

3 Slices Provolone cheese

Extra Virgin Olive Oil

Hot Pepper Flakes (optional)


In a small frying pan, pour olive oil in and heat on medium high heat.

Throw peppers in and fry until they start to soften and turn slightly brown.

Pour beaten eggs in and make into an omelet, turning after bottom has hardened.


Meanwhile, on a baking sheet or cake pan, place bread and spread with hot tomato sauce. Cut one piece of Provolone in half and place on bottom side of side of the bread.


When the pepper and egg omelet is done, fold in half and place on the side of bread with the Provolone.


Sprinkle with hot pepper flakes if you wish.


Fold the remaining 2 slices of Provolone on top of the omelet.


Place under broiler until cheese starts to melt.


Take the other half of the bread with the sauce on it and cover the other half.


Keep under the broiler until the top of the bread starts to toast.


Remove from broiler, Cut in half and serve with your favorite chips.


Makes one grinder.
