Hearty Pea Soup with Ham

This is my own recipe for Pea Soup. It is very simple to make and soooo tasty!!


Ingredients:

1 16 oz bag dried split green beans

2 cups ham cubed in small pieces

1 large or 2 medium russet potatoes, peeled and cubed in small pieces

1 large carrot, cubed in small pieces.

6 cloves garlic, chopped

1 large onion, chopped

2 tbs. salt

1 tbs. pepper

1 tbs. parsley flakes

1 tbs. dried oregano

1 cup extra virgin olive oil

5 qts. water

In an 8 qt. soup pot, add oil, onions and garlic. On high heat, stir for about 2 minutes until the oil has infused with the onions and garlic. Add rest of ingredients. Stir until all mixed. Bring to a boil. Reduce heat to medium and simmer until everything has softened and soup is starting to thicken, about 45 minutes.

When everything has softened, with an emerging blender, blend until soup has thickened but there are still small pieces of the veggies and ham.

Serve with a scoop of Cuban White Rice and a few drops of hot pepper sauce.

This will make a meal by itself or serve with a side. In the picture below, I served it with a side of Cuban Tamales (recipe coming soon).
