Quick and and Easy Oven Roasted Vegetables

Happy Memorial Day Weekend and a Big Thank You to all who served and still serve to keep us Free!
This is a very tasty, quick and easy recipe that serves 4 but feel free to double or triple ingredients and add other vegetables of your choice.
4 small sweet potatoes, peeled and cut in about 1/4" slices
1 large broccoli head, split into florets
1 large onion, quartered lengthwise
1/2 large green pepper, cut in medium sized chunks
1/2 large red pepper, cut in medium sized chunks
4 garlic cloves, quartered
1 tbs dried parsley flakes
1/4 cup extra virgin olive oil
salt and pepper to taste
Pre-heat oven to 400 degrees
Place all veggies in a cookie sheet
Drizzle olive oil over them
Add parsley flakes and salt and pepper to taste
With clean hands (best kitchen tools) mix everything
Place on bottom rack of pre-heated oven
Roast for about 30 minutes flipping over occasionally (with a spatula this time, not your hands!) until veggies are soft but not mushy.
Remove from oven and place in serving bowl
Serve and enjoy!
I served these last night with my Rice Pilaf with Orzo and pan fried cube steak. Good Dinner!!
