Papas Rellenas
Happy Sunday!
Today I made Papas Rellenas. ...Stuffed Mashed Potatoes.
I still had some Picadillo left, so I thought I would make these for you tonight.
Here you go.....
3 large or 4 medium Russet Potatoes.
3 eggs beaten with a little water in them.
3 cups Italian flavored bread crumbs.
Picadillo ( See my June 8th post for the recipe for Picadillo)
Canola Oil for frying.
Peel and cut potatoes and place in a pan with about 1 tbs salt. Cook until fork tender. Drain and mash. Cool until you can comfortably touch them.
Beat eggs and add about a tbs water.
Pour Italian flavored bread crumbs into another dish.
With your hands, take a small scoop of the mashed potatoes in your hand and make a small indentation. Place a small scoop of the picadillo in that indentation. Take some more of the potatoes and place over that. Make a ball….For you Northeners, make a snow ball….
Drop into the dish with the breadcrumbs and bread well. Then drop into the egg wash, then back in the bread crumbs. Place on a dish and continue with the rest of them. Let them air dry while you heat the oil.
In a small sauce pan, fill halfway with the Canola Oil. Bring to a high heat but to to a smoking point.
Place balls in the pan, 3 at a time. When golden, remove from pan and place on a paper towel lined plate,
