Keto Friendly Cauliflower and Egg Stir Fry
Sooo, yeah, I have been making and sharing all kinds of awesome recipes with you....but as I make them and test them, I eat them!!! Well, guess what....I need to eat a little lighter once in a while, ya know?
This is a recipe that I make once in a while ( and will be making more often for a bit)...It is very simple and easy. Very filling and it doesn't have any carbs.
Here we go.....
Ingredients:
1 medium cauliflower
3 cloves garlic
4 eggs, beaten
1/2 cup extra virgin olive oil
2 tbs fresh parsley, chopped, or 1 tsp dried parsley flakes
Salt and Pepper to taste.
Cut cauliflower into medium to small florets. In a medium pot, halfway filled with water, add cauliflower florets, garlic and salt. Bring to a boil, reduce heat to medium high, cover and cook for about 20 minutes.
When fork tender, remove from heat and drain into a colander.
Add oil to a medium frying pan.
Warm oil, and drop cauliflower and garlic in pan. Stir for about 5 minutes.
Add beaten eggs, parsley, salt and pepper.
Keep turning until eggs are cooked and they have started to crisp a bit.
You can serve with a salad for a low carb dinner, or serve as a side dish with anything else you would like.
