Ham Cubes

As Promised, here is the recipe for my Ham Cubes. Very easy and tasty!


(2) 2” slices of any 2.5 lb. Small Ham, cut in cubes about 2” or so


1 c Orange Juice


1/2 c Extra Virgin Olive Oil


2 tbs Butter


Juice of 1/2 Lemon


1 tbs chopped Fresh Parsley


In a large skillet, place oil and butter on medium high heat until the butter melts.


Add ham cubes and stir until they start to crisp a bit.


Add the rest of ingredients. Stir until well blended. Bring to a slight boil, then reduce the heat to low. Cover and simmer for about 15 minutes, stirring occasionally..


Serve with rice ( I served this one with my Rachel’s Rice Pilaf), potatoes, pasta with butter or any other side dish that you wish. (Hey, that rhymes!)
