Homemade Ham Fried Rice
Who needs take out?? Not me! This Ham Fried Rice is my own creation and it takes less time than waiting for that delivery!
It is a meal in itself. You have the carbs, veggies and protein all in one dish.
Ingredients:
3 Cups day old cooked white rice
4 eggs, beaten
2 cups ham cubed small
1 cup cubed green pepper
1 cup cubed onion
3 cups thinly sliced savoy cabbage
3 cups mung bean sprouts
1/4 cup extra virgin olive oil
Soy sauce to taste and color
First of all….do not add any salt to this dish! You already have the salt from the pre made rice, the ham and the soy sauce.
In a large frying pan, pour the oil. When hot, drop in the beaten eggs. Flip when the bottom side is cooked and continue cooking till eggs are solid. Don’t worry if the eggs break when flipping. When eggs are cooked remove from heat into a plate.
Throw in the pan the ham, onions and peppers. Keep flipping for about 2 minutes. Add the cabbage. Keep flipping. Add rice…flip some more. Add the bean sprouts….yes….keep flipping….add soy sauce a bit at a time and keep flipping. keep adding the soy sauce until the rice starts to turn brownish. Cut the eggs into strips and add to pan…Flip some more….
Lower heat to medium low and cover. Simmer for about 10 minutes flipping once in a while until the rice has absorbed the sauce.
