I am Thankful for this Caprese Salad!

Hi Friends,


This post is not so much about the recipe for the Caprese Salad but to talk about how in these days of craziness, there are still many amazing people out there.


Last week while I was at work at O'live a Little, a customer came in to buy some Black Fig Balsamic which is my favorite! We got talking about how she was going to use it on her home grown tomatoes, and we got talking about gardening. You know that got me going!! We started sharing what we grow and our Heirloom tomatoes. I told her I grow Brandywine and then she told me about her Heirloom Cherokee Purple Tomatoes. I had never heard of them! She told me that she was coming back this week to get some of our new Mozzarella and asked if I was working Thursday. I said yes.


Well....yesterday she came in with a bag of her Cherokee Purple tomatoes just for me!!! Isn't that awesome???? She made me feel so happy that she thought of me!!! She didn't have to do that!!!

Well, last night I made a very tasty Caprese Salad!

Here is what I used:

1 large Cherokee Purple tomato (you can use any other Heirloom tomato, they have the best flavors!)

4-5 slices Mozzarella, cut thin

6 large leaves fresh Basil, finely chopped

Drizzle of Olive Oil ( I used Italian Herb from O'live a Little)

Drizzle of Black Fig Balsamic from O'live a Little

Salt and Pepper to taste

Layer the tomatoes and mozzarella on a plate, add salt and pepper. Add Basil and drizzle with Olive Oil and Balsamic.
